Cherry and Coconut Cake
Ingredients
- 150 g Coconut Oil melted
- 175 ml coconut milk
- 100 g soft brown sugar
- 1 Getbuzzing High Protein Cherry Bar (crumbled)
- 3 eggs (lightly beaten)
- 4 – 6 Tablespoons desiccated/shredded sweetened coconut,
- 225 g Plain / All purpose flour (sieved)
- 1 tsp baking powder
- ½ tsp salt
- 350 g Canned or glace Cherries, pitted and roughly chopped

Directions
- Pre heat oven to 160oC
- Melt coconut oil in bowl and add soft brown sugar.
- Roll cherries in a tbsp of flour (so they don’t sink to bottom of cake) add all the rest of ingredients
- Mix well and place in greased tin
- Bake for 1hr – 1hr 10
